Scrambled eggs must never be cooked at a high temperature; otherwise the eggs turn dry and crumbly.<br />
<br />
Basic scrambled eggs are made from two eggs to which 25ml of milk or water has been added and seasoning. Whisk with a fork to mix the whites and yolks. Heat 10ml of butter in a pan until it sizzles and bubbles and add the egg mixture. When the mixture starts to congeal, stir lightly with an egg-lifter. Do not stir continuously. Cook until the mixture is firm but not dry.<br />

<span style="font-size: large;">Hints: </span><br />
<br />
Cook scrambled eggs over the low heat. <br />
<br />
Remove the pan from the heat while the scrambled eggs are still moist, as the heat retained in the eggs will set them even further. At this stage a dash of milk can be added to halt the setting process and keep the eggs moist. <br />
<br />
When scrambled eggs are already too dry, a raw beaten egg can be stirred into the set egg mixture.<br />

I love potato salad... but all those carbs! So here's a low carb
potato salad / with cauliflower instead .... It is SOOOO good!<br />
<br />
<u><span style="font-size: large;">INGREDIENTS</span></u><br />
1 head of cauliflower steamed or boiled until tender in bite size pieces<br />
<br />
6 boiled eggs (when done peel eggs, rinse and separate yokes into a
bowl.<br />
Then mash the yolk and cut the whites into small bite size pieces and then blend together.<br />
<br />
1/3 cup (appx) miracle whip or mayonnaise (don't use light, it has more carbs)<br />
<br />
3 tbs of mustard<br />
<br />
3 tbs of pickle relish<br />
<br />
1/8 cup of chopped onion (uncooked) can use more if you prefer<br />
<br />
salt/pepper to taste<br />
<br />
<br />
<br />
<u><span style="font-size: large;">METHOD</span></u><br />
Mix all together and you can garnish with egg slices and parsley.<br />
<br />
Chill over night.<br />
<br />

1.5 kg potatoes<br />
2 x 175g Sour Cream & Chives Dip & Top<br />
5 ml whole grain mustard<br />
5 ml Dijon mustard<br />
1 shallot, finely chopped<br />
30 ml Sour Cream<br />
40 ml chives, chopped<br />
Salt and freshly ground black pepper to taste<br />

METHOD<br />

Place potatoes, with their skins on, in a large pot and cover with water. </span></span><br />
<span style="font-family: Lucida Grande;"><span style="font-size: 12pt;">Bring to the boil. Simmer for 15 minutes until just tender. </span></span><br />

<span style="font-family: Lucida Grande;"><span style="font-size: 12pt;">Drain potatoes in a colander and place the colander on top of the hot pot, covering the potatoes with a clean dish cloth. Allow the potatoes to steam for 20 minutes. Leave to cool. </span></span><br />

<span style="font-family: Lucida Grande;"><span style="font-size: 12pt;">When the potatoes are cool enough to handle, rub off the skins and chop into small cubes. In a large mixing bowl add the Sour Cream & Chives Dip & Top, whole grain and Dijon mustard, chopped shallot, Sour Cream and salt and pepper. </span></span><br />

<span style="font-family: Lucida Grande;"><span style="font-size: 12pt;">Mix until fully combined. </span></span><br />

<li>300 g broccoli, cut into florets</li>

<li>2 avocados, quartered and cut into chunky wedges</li>
<li>100 g ricotta or feta, crumbled</li>

1 small red onion, peeled and chopped<br />
1-2 fresh red chillies, de-seeded and finely sliced<br />

2 cups chickpeas prepared as per pack instructions<br />
1 handful fresh mint, chopped<br />

<strong>Method</strong><br />
Mix the chopped onion, chillies and tomatoes.<br />
Squeeze the juice of half a lemon and 3 tablespoons of olive oil. Season to taste.<br />
Heat the chickpeas in a pan, then add 90 per cent of them to the bowl.<br />
Blend
the remaining chickpeas and add these as well – they will give a nice
creamy consistency. Allow to marinate for a while and serve at room
temperature.<br />
Just as you’re ready to serve, give the salad a final dress with the fresh mint and basil.<br />
Place on a nice serving dish and crumble over the feta cheese.<br />

</h3>

<li>Chop up everything into little bits, then fry it all in a large saucepan with a bit of butter. [about 5x minutes]</li>
<li>When everything has gone soft and mooshy, add the Chicken Stock and boil it for about 15 minutes.</li>
<li>Let
it cool down a bit and then pour it into a food processor [or you could
use a Bamix/Stick Blender] and puree it until it has a fine texture.</li>
<li>Back into the saucepan, add the cream and gently simmer for 10x minutes, <strong>but make sure it doesn’t boil</strong>.</li>
</ol>
<strong>Side Dish:</strong><br />
<ol>
<li>Slice the Batard and dry-fry it on the grill. (That sounds good enough to eat on its own!)</li>
<li>When the
bread is nicely toasted with the grill lines criss-crossed [because that
looks really cool], rub garlic onto both side of the bread and add a
light “dusting” of ground black pepper – but not too much!</li>

<b>Ingredients</b><br />
• 650 g beef mince <br />
• 1/2 onion, finely chopped <br />
• 2 garlic cloves, finely chopped <br />
• 4 T parsley, roughly chopped <br />
• 65 ml Worcester sauce <br />
• 3 bread slices, crusts removed <br />
• 190 ml milk <br />
• Sea salt and freshly ground black pepper, to taste <br />
• 2 T sunflower oil<br />

<b>Cooking Instructions</b><br />
Preheat the oven to 180°C.<br />
<br />
Combine the mince, onion, garlic, parsley and Worcester sauce in a mixing bowl.<br />
<br />
Place the bread in another bowl and pour over the milk. Allow the bread to soak up the milk, then gently squeeze out any excess and add the soaked bread to the mince. Season and mix the ingredients together.<br />
<br />
Heat a griddle pan over a high heat. Mould the mince mixture into 6 equal-sized patties, brush with sunflower oil and cook for 1 minute, then turn over and cook the other side.<br />
Finish the patties in the oven for 3 minutes, taking care not to overcook them.<br />
<br />
Cook’s note: This burger recipe works just as well when cooked on the braai over medium-hot coals. Do not use lean mince for this recipe as the patties will be dry. The higher the fat content, the juicier the patty.<br />
